We guarantee the quality of all of our products. Each carcass is individually graded so you only receive the highest standard meat from our butcher in Mortdale.
OUR STANDARD OF MEAT – AND WHAT TO LOOK FOR WHEN BUYING MEAT
Our quality veal is greyish pink, with a firm texture with very little fat and no marbling. The bones are porous, soft and red, exactly the way veal should be. Our beef is firm and slightly moist with a fresh red colour, and most importantly, it’s well marbled with fat! The quality lamb you’ll find at Bresnahan’s Butchers & Fine Foods is pinkish red and firm with little marbling and little fat. The colour of the fat will vary with age and breed of the animal. The colour turns darker as the animal grows older. The lighter the colour, the more tender the lamb. Our cuts of pork have more lean meat that fat and bone. A good cut of pork will be greyish pink and the flesh feels relatively firm. It should be well marbled and covered with firm white fat.
HOW TO STORE PRODUCTS AT HOME
Meat should be immediately refrigerated or frozen after it’s purchased. If you plan to divide it up and freeze portions, try to do so as soon as you can. If you store meat in freezer bags, try to remove as much air from the bag as possible. But of course we think it’s better for you to come into our butcher at Mortdale to buy your meat fresh, the day you plan to cook it!
SPECIAL DIETARY ALTERNATIVES
At Bresnahan’s, we pride ourselves in going ‘the extra mile’ to develop specialty products that help to enhance the lives of people with different dietary requirements. We have recently developed a low-salt alternative for Menieres Australia which has been certified by EML Pty Ltd (Food Chemistry). We are currently retailing this product in both a thick and a thin sausage, plus a meat patty for those who love their burgers.
